Blue's Meatloaf recipe

Since I talk about this recipe a lot, figured I share it with everyone else! It has been a staple at my place for like, ages and it's our favorite meatloaf recipe. I'll post photos when I'm able to, but this is an easily doubled recipe too if you want to freeze them for another time! Also when I say it makes two loaves, it does – but it doesn't mean you have to make the second loaf into a loaf if that makes sense.
Betty Crocker's 'Cooking for Two' – 1974 Edition
Meat Loaf
1 egg
½ cup milk (might not use all of it as a heads up)
1/3 cup bread crumbs (I typically use a single box of stove top or any like equivalent, as long as it's a 6 ounce box)
1 pound ground beef (I prefer leaner)
2 tablespoons finely chopped onion
½ teaspoon salt
1/8 teaspoon pepper
¼ teaspoon dry/ground mustard (or a squeeze of reg. yellow mustard)
¼ teaspoon garlic salt
1 teaspoon Worcestershire sauce
Couple of other ingredients: We always add a good squeeze of ketchup into our own meatloaves. We also we mix in about a teaspoon of dry Italian herbs if we're using it only as a meatball recipe.
- Preheat your oven 350 degrees and line a baking sheet (8x12 I think our small ones are) with two layers of tin foil (easy clean up!!)
- Mix all of the ingredients together
- Divide mixture in half to form two rolls on said baking sheet. Top with ketchup if you like! (enough to have a decent layer over the top)
- Bake for 35-45 minutes (give or take depending on your oven)
- Let cool for a few minutes, then slice up and enjoy!
> Note: My mom from time to time makes this recipe, and tops it with bacon instead of ketchup I will ask her how she does this but I think it's just until the bacon is done?
For meatballs:
- Same as above, but instead of diving into two loaves, use an icecream scooper (big or small) to make uniform meatballs.
- Bake small meatballs for 25 minutes roughly, big meatballs 30 minutes roughly. (check one for any pink if unsure of this time!)
- Drain the fat from the pan with a turkey baster, spoon, tipping the pan if you feel comfortable doing so.
- bake another 5 minutes to crisp up a little more
- remove from pan to cool on plates, then throw into spaghetti sauce, stick toothpicks in, whatever and enjoy 8D
What the book says about meatballs that I only just now discovered:
- prepare loaf as above recipe, only decrease milk to ¼ cup. Bake at 400 degrees for 20 minutes
IDEARS FOR LEFTOVERS!
- Salisbury steak: slice a cold loaf into 1 inch slices, make up a packet of brown, mushroom, beef gravy ( or pork) in a pan, pop the slices of loaf into the gravy, let it heat up. Don't worry if you have ketchup on the loaf, it's oddly tasty with the Salisbury steak
- meatloaf sandwich (dur)
- Meatcubes (this is what we do if we made two loaves, and decide to not use the second loaf for Salisbury steak)
Note: If you want to freeze the second loaf Do NOT TOP WITH KETCHUP – cook it as normal, wrap it with tin foil, then to reheat it place the wrapped FROZEN loaf in the oven at 350 for 50 to 60 minutes, we have not done this in my household.
